Presence of Nitrogen in proteins makes it different from carbohydrates and fats. The basic unit of protein is amino acid. Any two proteins are not similar in quality and utility. 1. Classification on the basis of source

A. Animal proteins

These proteins are obtained from animal sources. These are high quality proteins. Milk and milk products, meat, fish, eggs, etc. are its main sources.

B. Vegetable proteins

Proteins obtained from vegetable sources are vegetable proteins. These are normally medium or low quality proteins. Proteins obtained from soyabeans are high quality proteins. Pulses, beans, lobia, groundnuts have medium quality proteins, whereas wheat, rice, jowar, barley have low quality proteins.

2. Classification on the basis of nutritive

Proteins can be classified on the basis of the amount and proportion of essential amino acids in foods.

A. Complete protein.

Proteins which have essential amino acids in proper amount and proportion are known as complete proteins. These help in proper growth and development of body. Milk, meat, fish, eggs, soyabean and some dry nuts have complete proteins.

B. Partially complete protein

Proteins which have less amount or number of essential amino acids are called partially complete proteins. These proteins are helpful in keeping the body alive but not in normal growth and development of the body, like proteins obtained from cereals, pulses, beans, etc.

C. Incomplete protein

The proteins which are deficient in proper amount number of essential amino acids are called incomplete proteins. These proteins are neither helpful in normal growth and development of the body nor in protecting the body, like proteins obtained from fruits and vegetables.

3. Classification on the basis of chemical composition 


A. Simple protein. 

Such proteins give amino acids only after hydrolysis. For example, Globulin in milk, Albumin in egg and Keratin in hair.

B. Conjugated Protein

In such protein non-protein substances are present along with amino acids. For example

Haemoglobi=Haem (Iron)+Globin (Protein)
Lipo Protein=Fat+Protein
Phospho Protein=Phosphorous+Protein

C. Derived protein

Derived proteins are not found in nature but are the results of digestive and enzymatic actitivie going on in the body. For example, peptones and peptides.

Functions of vitamin B2

Functions of vitamin B2 are similar to that of vitamin B1.

Deficiency of vitamin B2 causes irritation and burning, sensation, itching and swelling of the eyes. Blood capillaries surround the cornea causing dim vision in a person.

(b) Effect on skin

1. Skin turns red and then black because of irnitation.

2. Mucous membrane of lips and mouth breaks up and cracks appear, lips become
Red. This condition is known as cheilosis.

3. The mucous membrane at the corner of the lips cracks and is known as Angular as
stomatitis.

4. The tongue becomes purplish red,smooth and shiny in appearance This is known as    Glossitis. In this condition, eating food is painful.

(c) Improper metabolism of energy causes loss of appetite.

(d) Reduced immunity of white blood cells.

Yeast, liver, milk and milk products are rich sources of vitamin B2. Apart from these green leafy vegetables, egg, bran, layer of cereals, sprouted cereals, pulses, peas, beans etc are other sources of vitamin B.
